LOCKED INN is an exciting and vibrant venue located in the heart of Ryde, offering guests a modern dining and cafe experience. Operated under The Trustee for The Bae Family Trust, the venue is committed to delivering high-quality food and exceptional service in a stylish, welcoming setting. We are currently seeking a dedicated and experienced Chef de Partie to support our kitchen leadership team and help drive our culinary operations.

Task & responsibilities

  • Menu planning within the budget, based on client demand and market requirements in liaison with the Head Chef and management.
  • Daily food production of approved menu supervision and participation
  • Ordering and managing food supply, food portion control, waste management, and stock procurement are all responsibilities (receipt and storage)
  • Ability to cost menu items appropriately and track production efficiency
  • Ability to keep track of product mix, client demand, and special promotions
  • Ability to accurately monitor food supply and kitchen equipment par levels, as well as notify management of any additional stock required
  • Ensuring that all food is cooked to perfection, served on time, and presented professionally
  • Able to handle equipment, appliances, small wares, supplies, and tools effectively and as per requirements.
  • Ensure consistent and smooth running of food preparation
  • Ability to manage temperature checks, cleaning charts, and food freshness 
  • Work to set guidelines and ensure food preparation, cooking, plating, and presentation are always maintained to a high standard
  • Maintain high kitchen standards in all areas of operation, food hygiene and safety, food quality, and preparation
  • Improve the kitchen's operating efficiency by adhering to and upgrading kitchen policy and procedure

Qualification & experience

  • Certification IV in Kitchen Management or related discipline
  • Minimum 1-2 years of proven experience in a fast-paced and quality-driven kitchen 
  • Passionate about cooking
  • Punctual and hard-working 
  • Enthusiasm and willingness to learn 
  • The ability to multi-task
  • Excellent communication and organizational skills 
  • Team player and supportive of a culture of teamwork
