Position Overview: We are seeking a skilled and passionate Chef specializing in Indian cuisine to lead our restaurant operations. The successful candidate will have extensive experience in menu development, kitchen management, staff supervision, and cost control within a busy commercial kitchen, ensuring that all food preparation meets the highest standards of quality, hygiene, and presentation.

Task & responsibilities
Key Responsibilities:
The main responsibilities will encompass, but are not limited to:
Menu Development & Culinary Innovation:
- Plan, design and implement innovative menus, featuring authentic and contemporary Indian dishes.
- Update menus regularly based on seasonal availability and customer preferences.
- Experiment with recipes to elevate traditional Indian flavors while ensuring consistency.
- Estimate food and labour costs, manage portion control and ensure profitability.
Food Preparation:
- Oversee and coordinate food preparation and cooking, maintaining high standards of quality, taste, and presentation.
- Ensure all recipes are followed accurately to maintain flavor consistency.
- Adapt menu items to accommodate dietary requirements and special customer requests.
Kitchen Operations Management:
- Supervise and lead a team comprising Cook, Kitchenhands, and other support staff, ensuring smooth kitchen operations and workflow efficiency.
- Train, mentor, and evaluate kitchen staff to uphold culinary excellence and foster professional growth.
- Manage daily kitchen activities to ensure timely service during high-volume operations.
- Maintain cleanliness, hygiene, and organisation within all kitchen area.
Cost Control and Inventory Management:
- Estimate and control food and labor costs while minimizing waste.
- Order and manage inventory, ensuring the availability of high-quality ingredients.
- Liaise with suppliers to source authentic Indian spices and ingredients, ensuring cost-effective purchasing practices.
Health, Safety and Compliance:
- Adhere to and enforce compliance with food safety, hygiene, and workplace health and safety regulations.
- Conduct regular inspections, staff briefings, and audits to maintain full compliance with regulatory standards.
Collaboration with Management:
- Work closely with management to develop new menu promotions and special events.
- Participate in operational meetings to address performance, staffing, and operational improvements.
- Incorporate customer feedback to refine menu offerings and service delivery.
Essential Skills and Abilities:
- Proven expertise in Indian culinary techniques, including Tandoor handling and cooking, and the use of authentic spices.
- Exceptional skills in preparing a variety of Indian dishes, including curries, biryanis, and street food specialties.
- Strong leadership and team management capabilities.
- Ability to handle high-pressure kitchen environments and ensure smooth service during peak hours.
- Sound knowledge of food safety and hygiene regulations, with a commitment to maintaining the highest standards.
- Creative flair for designing menus and introducing innovative dishes.
- Excellent organizational and multitasking skills.
- Proficient in inventory and cost management practices.
Role Requirements:
- Availability to work flexible hours, including evenings, weekends, and public holidays.

Qualification & experience
Qualifications and Experience:
- Certificate IV in Commercial Cookery or Diploma (or equivalent qualification).
- Minimum of 3 years of experience as a Chef, preferably in an Indian restaurant setting.
- Extensive knowledge of Indian culinary techniques, spices, and regional and street food specialties.
- Strong leadership and team management skills.
- Excellent understanding of food hygiene and safety regulations.
- Ability to work under pressure and handle multiple tasks efficiently.
