Mooloolaba Surf Life Saving Supporters Club Inc t/a The Surf Club Mooloolaba is currently seeking a trade-qualified Full-Time Chef to fill a senior position within our multi-outlet commercial kitchen operations. The successful candidate will be required to independently manage assigned kitchen sections including the grill, pans, and larder in a high-volume environment. The qualified chef will be expected to maintain a high level of professionalism, meet the strict service expectations of the head chef, and provide direct operational supervision and delegation to junior kitchen staff and apprentices.

Task & responsibilities

  • Contribute to seasonal menu design, forecast required ingredient quantities, and help monitor kitchen food cost percentages.
  • Run the line during peak dining periods, preparing and cooking complex à la carte items and main courses utilizing professional culinary judgment.
  • Take ownership of busy hot and cold sections, specifically demonstrating advanced technical proficiency across the grill, pans, and larder lines.
  • Inspect plates before they leave the pass to ensure strict consistency in food presentation, flavour profiles, and correct temperature controls.
  • Direct the daily workflows of line cooks, apprentices, and kitchen assistants, providing hands-on guidance regarding cooking techniques and kitchen safety.
  • Oversee stock rotation, manage daily ordering sheets, and conduct inventory checks to ensure production demands are fully met without excess wastage.
  • Maintain clear, efficient communication with front-of-house supervisors to manage order ticket times and ensure smooth food delivery during heavy rushes.
  • Drive strict kitchen cleanliness and safety compliance, ensuring the entire team adheres to the venue's food safety program and WHS guidelines.

Qualification & experience

For the Chef to be able to perform effectively in their duties, they should possess certain skills. The following are Chef job skills and specifications:

  • Excellent attention to detail and consistency in plate presentation under high-volume service pressure.
  • Advanced knife skills and technical proficiency across specialized kitchen sections, specifically grill, pans, and larder.
  • Proven ability to operate efficiently under pressure and maintain strong communication within a fast-paced, diverse work environment.

Requirements:

  • Qualifications: Should have relevant trade or vocational training.
  • Experience: Minimum of 3 years of relevant industry experience.
  • Availability: Must be available to work a flexible rotating roster across a 7-day operation, including split shifts, nights, weekends, and public holidays.
