Buffalo Hotel is a popular country pub known for its friendly atmosphere, quality meals, and extensive menu featuring traditional pub favourites, steaks, schnitzels, burgers, seafood, pasta, and chef specials. We are currently seeking an experienced and motivated Senior Cook to join our kitchen team on a full-time basis.

About the Role

As a Senior Cook, you will play a key role in the day-to-day operation of our busy kitchen. You will be responsible for preparing and cooking a wide variety of menu items while maintaining high standards of food quality, presentation, hygiene, and customer satisfaction.

Key Duties and Responsibilities

  • Prepare, cook and present menu items including schnitzels, steaks, burgers, seafood dishes, pasta, parmas, chicken specialties, and weekly specials.
  • Examine ingredients and food products to ensure freshness, quality, and consistency.
  • Regulate temperatures of ovens, grills, fryers, and other cooking equipment to ensure food is cooked safely and efficiently.
  • Season and prepare food during cooking according to established recipes and customer requirements.
  • Portion meals appropriately and ensure dishes are presented attractively with sauces, gravies, garnishes, and accompaniments.
  • Prepare meals for customers with special dietary requirements, including vegetarian and gluten-free options.
  • Store food safely in temperature-controlled facilities and monitor stock rotation procedures.
  • Assist with menu planning, daily specials, and estimating food and stock requirements.
  • Maintain a clean, organised, and compliant kitchen environment in accordance with food safety standards.
  • Supervise, train, and support junior kitchen staff and apprentices where required.
  • Work collaboratively with management and front-of-house staff to ensure smooth service during busy lunch and dinner periods.

Skills and Experience

  • Certificate III in Commercial Cookery or equivalent qualification.
  • Minimum 1 years of relevant commercial kitchen experience.
  • Strong knowledge of food preparation techniques and kitchen operations.
  • Experience preparing a broad range of pub-style meals, including grilled meats, seafood, pasta, burgers, and specialty dishes.
  • Understanding of food safety, hygiene, and workplace health and safety requirements.
  • Ability to work efficiently in a fast-paced environment.
  • Strong organisational and teamwork skills.
