Position Title: Sommelier

Key Responsibilities:
Floor Leadership & Wine Service: Lead beverage service on the dining room floor, confidently engaging with guests to guide them through our extensive list and deliver tailored, approachable recommendations.
Pairing Execution & Innovation: Collaborate closely with the culinary and beverage teams to curate and serve evolving, innovative beverage pairings—including premium global and Australian wines, sake, and premium non-alcoholic/botanical elements that complement our menus.
Cellar & Stock Management: Maintain immaculate standards of organization across the main cellar and day-cellars. Oversee accurate inventory management, stock rotation, weekly stocktakes, and the careful receiving of premium allocations.
Team Education: Conduct regular, engaging beverage training sessions for the broader front-of-house team to elevate product knowledge, confidence, and service consistency across the floor.
Glassware Mastery: Oversee the care, handling, and maintenance of our premium, delicate handmade crystal glassware and specialized sommelier equipment.
Requirements & Qualifications:
A minimum of 2–3 years of experience as a Sommelier or Senior Wine Waiter in a premium, fast-paced, or fine-dining restaurant environment.
Formal wine qualifications (WSET Level 3, Certified Court of Master Sommeliers, or equivalent industry experience) are highly regarded.
Deep, current knowledge of both global and domestic wine regions, with a strong understanding of spirits, craft beers, and flavor-pairing theory.
Exceptional communication and interpersonal skills—the ability to read a table and demystify wine for guests with warmth and humility.
High organizational skills and the physical stamina required to manage a busy cellar and a high-energy, moving dining room floor.
Current South Australian RSA certificate.
