We are seeking an experienced, creative, and hands-on Chef (or Head Chef) to lead our kitchen team. You will be responsible for menu development, kitchen operations, cost control, food quality, staff mentoring, and ensuring a seamless dining experience for our guests.

Task & responsibilities

Oversee all kitchen operations: food preparation, cooking, plating, and kitchen workflow

Develop, update, and cost new menus (including daily specials) consistent with pub / hotel dining style

Ensure food quality, presentation, portion control, and consistency

Maintain high standards of food safety, hygiene, and kitchen cleanliness (compliance with relevant Queensland / Australian health regulations)

Procure, order, and manage inventory of food & ingredients; establish relationships with local suppliers

Monitor and control food costs, wastage, and profitability

Recruit, train, mentor, and supervise kitchen staff (cooks, kitchen hands)

Schedule kitchen rosters and coordinate with front-of-house for service periods

Collaborate with management for event menus, functions, and seasonal promotions

Troubleshoot kitchen issues, maintain equipment, and ensure smooth service even during peak times

Assist in budgeting, forecasting, and reporting to management


Qualification & experience

Proven 2+ year experience as a Chef, Sous Chef, or Head Chef (especially in hotel, pub, or restaurant environment)

Strong culinary skills and creativity, with ability to design menus that appeal to both locals and guests

Knowledge of food cost control, inventory management, and supplier negotiation

Understanding of food safety regulations (HACCP, local health standards)

Excellent leadership, communication, and team-building capabilities

Ability to work under pressure, manage multiple tasks, and maintain composure during busy services

Flexibility in working hours (evenings, weekends, public holidays)

Strong attention to detail, cleanliness, and organization
