In this role, you will prepare and cook authentic Mexican-inspired dishes while ensuring consistent quality, flavour, and presentation. You will maintain a clean and organised kitchen, adhere to food safety and hygiene standards, and work efficiently in a fast-paced, team-oriented environment. Task & responsibilities

• Prepare and cook a variety of Mexican dishes
• Ensure consistency, quality, portion control, and presentation of all dishes
• Use and operate kitchen equipment such as fryer, conveyor oven, flat-top grill, and other appliances while adjusting settings to meet cooking standards and ensure consistent food quality
• Monitor stock levels and store food in temperature-controlled environments to maintain freshness and safety 
• Assist with menu planning and contributing to the development of new dishes
• Cater to dietary requirements and allergies where required 
• Ensure compliance with food safety, hygiene, and workplace health and safety standards

Qualification & experience

• 3+ years of proven kitchen experience in a fast-paced environment
• Certificate IV in Kitchen Management or equivalent (optional but advantageous) 
• Practical experience preparing and cooking Mexican dishes 
• Familiarity with ingredients, artisanal cooking methods and presentation styles relevant to Mexican cuisine
• Passion for Latin/Mexican culture
• Ability to work in a fast-paced environment and handle pressure 
• Strong attention to detail and time management skills
