Chef

We are seeking a skilled and passionate Chef to join our dynamic kitchen team at Rosa Mexicano Glenelg, a popular destination known for delivering vibrant, authentic Mexican flavours. The successful candidate will be responsible for preparing high-quality dishes, supervising kitchen operations, and maintaining high standards of cleanliness, efficiency, and culinary excellence.

Task & responsibilities

• Prepare and cook authentic Mexican dishes, including tacos, burritos, enchiladas, quesadillas, nachos, and fresh salsas.
• Chop vegetables, marinate meats, and prepare sauces like guacamole, picode gallo, and chili sauces before service starts.
• Plan and design menus with traditional and modern Mexican dishes and update them from time to time.
• Manage kitchen inventory and stock, making sure fresh ingredients are always available and ordering supplies when needed.
• Supervise and guide kitchen staff, teaching them how to properly cook and present Mexican food.
• Make rosters and assign duties to kitchen workers, ensuring smooth kitchen operations during busy hours.
• Use kitchen equipment like ovens, grills, fryers, tortilla presses, and ensure they are clean and maintained.
• Follow health and safety rules to keep the kitchen clean, organized, and hygienic.
• Create special dishes using leftover ingredients to reduce waste and add variety to the menu.
• Control food portion sizes and quality, making sure every dish looks good and tastes great.
• Work with management to control food costs and pricing, keeping quality high and waste low.

Qualification & experience

• A Certificate III or IV in Commercial Cookery (or equivalent experience)
• Proven experience working in a commercial kitchen for at least 1 year, preferably with exposure to Mexican cuisine.
• Strong leadership skills and a collaborative mindset
• Excellent time management and attention to detail
