We are currently recruiting for a Full Time Executive Chef to join our team.
Reporting to General Manager, as Executive Chef, you will be responsible for the planning and organization of all activities in the production of food within our kitchen. With our two Food & Beverage venues and Event spaces, you will be a supportive and coaching leader that guides the culinary team to ensure smooth & effective guest experiences.
This varied and dynamic role provides a chance to develop your professional Culinary career within a vibrant and purposeful growth focused, international company.
Main Responsibilities include but not limited to:
You will drive culinary standards specific to our hotel which meets and exceeds the expectation of the hotel’s guests.
Seasonal updates of menus across two restaurant and bar outlets, and Events, to include while not limited to breakfast, lunch, dinner, bar snacks and high tea.
Updates of Event DDP Menus and packages
Management of entire F&B Budgets & Costs including creation of revenue driving initiatives eg, Wine Dinners with local suppliers, special dining events.
Maintaining HACCP standards to ensure continued success of HACCP Certification
Management of rosters and payroll costs
Ordering and stock control, considering at all times local produce and suppliers to support our local community in our company’s purpose of care.
Training and development of all team members, communicate clearly at all times and hold regular meetings with team to share, inspire, develop
In conjunction with Sales & Marketing, plan and execute promotional activities for all F&B Outlets, events and promotions
Work in partnership with Food & Beverage Manager to identify ahead of time and respond to market trends, along with a focus on Hyatt’s Top 20 fundamentals in F&B
Participate and support Hyatt’s World of Care pillars across People, Planet and Responsible Sourcing.
Requirements
Relevant experience in a major group of restaurants and/or 5 star hotel environment
Proven experience in leading and developing others
Relevant degree / diploma / or certification in cookery
HACCP Experience highly desirable
Unlimited/Unrestricted work rights in Australia
